So I thought that since I was posting all these recipes on my weekly meal plans that it would be good to go back and let you know how they all turned out and what we thought of them! Each month I will do a recipe review for the previous months recipes. Last Months recipes came from my Weight Watchers Just 5 Cookbook, Mix and Match Mama and Peanut Butter Fingers.
Shaeffers Teriyaki sauce - chicken - yum! I will definitely use this teriyaki recipe again! I marinated the chicken for just over 24 hours. I thought it had a nice teriyaki flavor the night we ate it, but it was even more flavorful cold on a salad a day later. I will definitely be trying it again and on some different kinds of protein as well. I think it would be great on shrimp.
Peanut Pasta - I thought this was phenomenal! I loved it and so did Mike and Owen, but Olivia didn't like it. I thought it would be a hit for everyone since it was a peanut butter sauce, but she wasn't a fan. I had cut up the chicken and put it in a Ziploc on the weekend, with that prepped, start to finish, it was on the table in 20 minutes! Quick and delicious, so it will be on my menu again, but I will save out some plain pasta for Olivia!
Pineapple Guacamole Burgers - I thought this was really good, but I was the only one in the family to try it, even Mike didn't want to try the Guacamole on his burger. So even though I liked it, I don't think it will make it into the dinner rotation. BUT, I loved the guacamole and saved the leftovers and ate it on my turkey sandwiches during the week and that was crazy good! So, I may not put it on a burger, but I will certainly be making the guacamole again!
Meatloaf Burgers - Yum, yum, yum! These were delicious! I didn't have green onions so I grilled up some red onions and put those on the burger before adding the sauce. So good! Perfect for our family because Mike and I loved the sauce, but the kids are picky so I just threw cheese on their burgers and Mike and I left off the cheese and added the sauce. I would either cut the sauce ingredients in half as we didn't use even close to all the sauce, or I saw in the comments of the recipe from Mix and Match Mama that someone said they froze the rest of the sauce. Great idea! We love a good burger so this will be popping up on the meal plan often!
Mussels with French Bread - I was a little disappointed with this recipe. One reason was my fault, I overcooked the mussels. I had never made mussels myself and clearly timing is delicate! The other reason was that it didn't have a ton of taste. I think I would add some more spices to the liquid next time. Otherwise, though, it was filling and a fun at home "date night" dinner.
Easy Lemon Vinaigrette Dressing - This was easy to make and really good! I was the only one in the family to try it, but it passed my test. I will definitely be making this again.
