WIAW - Carb Cycling meals

Today, I was going to be specific to lunches, but changed my mind at the last minute and decided to just do some random meals on low or high carb days or reward days! This post contains meals from the first 2.5 weeks of the diet!

I struggled a little with what to eat for my first meal of the day, and this week, I am doing some experimenting that I think will work out great! But for the last few weeks I have eaten a couple of random things such as cottage cheese and fruit. This isn't my favorite and yesterday, I think I ate it for the last time for a bit. I almost couldn't get it down! It does look delicious, but I can't get past the texture!

This weekend on reward day (Saturday), I made some scrambled egg whites with Monterary Jack w/jalapenos cheese and a side of a blueberry muffin. They were delicious!

One day last week, I wasn't super prepared for lunch. I had a plan, but then it didn't end up working out. So I threw something together that was perfect for a high carb lunch, so fast to throw together and really, really good! I had some leftover grilled chicken, some cut up veggies and some leftover rice. I put it all together and put on some soy sauce for flavor. It was perfect!
One night last week, I made Blue Cheese steak and it felt like a really fancy meal! I have never melted cheese over steak! Although it felt fancy making it, and I loved the idea of it, I didn't love it :(
I think the blue cheese cooked was a little too strong for me. I enjoy a bit of blue cheese on a salad but for this meal, it was a little overwhelming. I think that I would like to try this meal again with a different type of cheese. I am a big goat cheese fan, so I am thinking that might be perfect!
On my first reward day, Mike and I went out to dinner and since it was reward day we could have dessert! We both love cheesecake and even though we could eat our own, we decided to share a piece! It was good! Doesn't it look good?
It might be the diet, but I am still looking at the picture! I would like to eat that cheesecake again :)
On Tuesday, I experimented with a new high carb lunch and I would say it was a success! So much of a success, that I am looking forward to eating it again tomorrow!

  1. I love hearing about your cooking experiments! And I feel the same way about cottage cheese -- I'm not a fan of the texture.

    1. I am surprised I could stomach it as long as I did! Hopefully after a few days off, I can still have it occasionally because it is quick and easy!
