Two weeks ago I posted a picture of my cheeseburger salad and I got a ton of comments on how good it looked. So, of course, I figured you all needed the recipe!
When I went away scrapbooking for the weekend a few months ago, someone told me about how she puts her cheeseburgers on a salad instead of using a bun and, I finally got around to trying it! You guys, this is a huge salad and super filling! Here is how I put it all together!
Cooked Ground beef patty
Red Wine Vinegar *optional
Pickles - I used sour
1 TBSP - shredded cheese
Cook beef patty on the grill or any other way you like to make it.
While the burger is cooking, chop onion and mushrooms and put them in a pan to saute. I use cooking spray and put them on low temp and let them cook slowly.
While they were cooking I put the lettuce on my plate and cut the tomatoes in half, shredded some carrots and cut up some sour pickles.
When the mushrooms and onions were finished, I turned the heat up to medium and added *Red Wine Vinegar. I have also used Balsamic Vinegar, but preferred the Red Wine. I let the vinegar deglaze the pan and then put the hot mix onto the lettuce, immediately, to soften the lettuce a bit.
Add the rest of the veggies and the cooked burger to the top. Top with shredded cheese.
I didn't use any dressing. Between the caramelized mushrooms and onions, softened lettuce, pickles and melted cheese, I didn't feel like I needed it at all, but I think it would also be great with a little Ranch dressing! You decide!
*Points value depends on beef and cheese, this is what my value was with a burger patty of 80/20 ground beef and the shredded cheese. You could definitely lower the points by getting less fat ground beef, but I bought a new kind of burger and I didn't look at the fat content. Everything else in this salad is 0 points! It is so filling, more filling than having a burger on a bun!
