Meal Planning Monday

Now that we are back into the routine of the school year, I am back to meal planning consistently! It feels great to be back! I am sticking to my simple meal planning because it makes planning so much easier. No matter how long I do this meal planning thing, I still struggle to come up with meal ideas. I sit there with my pencil and paper and my mind goes blank! 

Right now I am sticking with this schedule...

This makes coming up with ideas so much easier. Some nights are consistent each week, so I don't even need an idea (Friday and Sunday) Saturday gives us the option to eat out to give me a break from cooking, Wednesday night is the grill because Mike is going to need to cook that night. This schedule works really well for us! Here is the plan for this week with Weight Watcher points included....

Breakfasts ideas: Open faced egg sandwiches (5PP), cold cereal (4-5PP) or my Crunchy Breakfast (6PP) 

Lunch ideas: Deli meat sandwich w/sides of Special K chips and raw veggies or fruit (9PP), Trader Joe's Tomato and Roasted Red Pepper Soup (3PP/cup)

Dinner Plans: 
Monday - BLT's with raw veggies and ranch (7PP)
Tuesday - Greek Tacos (Mix and Match Mama) (7PP for 2 tacos) served with a side salad 
Wednesday - Grilled chicken made with McCormick Island Woodfire Grill marinade. Side of Rice and grilled veggies (12PP)
Thursday - Kielbasa w/leftover rice and veggie (7PP)
Friday - Pizza and movie night (points vary)
Saturday - Out to dinner after church (points vary) 
Sunday - Easy Chicken Parmesan served with pasta and side salad w/dressing. (13PP)

I love chicken parmesan, but on Sundays we are often busy and then its the end of the day and we need to get settled, showered and ready for bed. So on Sundays I need a quick meal that everyone loves and this meal works perfectly! 


Easy Chicken Parmesan


Ingredients

 4 - Baked chicken patties
1/2 Cup - Marinara sauce
4 TBSP - Mozzarella Cheese

These are the kinds that I use...


Instructions

Preheat oven to 425 degrees and place chicken patties on a nonstick baking sheet. 

Bake for 1/2 of cook time (6 minutes for mine) pull out of oven, flip patties add sauce and cheese to the top and put back in the oven until cooked and cheese is melted. 

Could that be any easier? That's it! Cook pasta for the side and use the rest of the sauce on the pasta, add a salad for your veggies and you have a complete meal in 20 minutes or less!

    1. Sorry, I should probably make that clear for new people to the blog! I am doing Weight Watchers so those are the Weight Watchers Points Plus! The chicken parmesan is great, let me know if you try it!

  8. I love eggplant parm. I would love chicken too if I wasn't a vegetarian. It's a basic recipe that's always a hit with the family.

  11. You are so smart to consistently meal plan! I feel like my husband and I would save a lot of hassle (and money) if we did this. I think you've inspired me to start meal planning after we buy our next set of groceries ;-)

    1. Awesome!! It makes such a difference when I have a plan! I don't spend as much at the grocery store because I know exactly what I need and we don't eat out. Without a plan, we eat a lot of take out!!! Good luck!

  14. I love this idea of having a floating schedule of meals! Really most of our meals would fall into general categories and then I can feel like I have some organization in the mess that is my meal 'planning.' (I use that word very loosely) ;)
