I am so excited to be linking up with Jenn for a What I Ate Wednesday post again! I am excited that it will keep me accountable as I try to stay within my points for the day and I love to see what everyone else is eating!
This week I chose Saturday because I wanted to be sure that I stayed within my points even on a weekend day! I don't know about all of you but the weekends can be hard when I am trying to eat healthy, but because I knew that I was documenting the day, I made sure I had a plan for the day and that it would fit into my points! So here you have a 29 point day on Weight Watchers!
I have been eating this breakfast a lot lately, it is quick and easy and low in points. I try to keep my breakfast under 6 points and this one comes in at 5 and does a great job of keeping me full until lunch!
On Friday night Mike and the kids ordered pizza out, but I didn't want to do that so I made myself a pizza instead. Doing Weight Watchers I can eat whatever I want and I certainly could have had pizza, but restaurant cheese pizza comes in at 7PP/slice. I made a pizza that comes in at 3.25PP per slice and it was gourmet (in my opinion), it was way better than a typical cheese pizza! I had 4 slices (because let's be honest, I didn't get to this weight by sticking to 1 or 2 slices of pizza) and it was 13PP. If I had 4 slices of the cheese pizza, it would have been 28 points, pretty much my whole day!
My "gourmet" pizza included reduced fat pesto, mozzarella, tomato, red onion, grated romano, italian seasoning and a sprinkle of crushed red pepper! So good! Since I only ate half of the pizza for dinner. I had 2 slices for lunch today with a side of fruit! Perfect!
I was hungry late afternoon and wanted something yummy before dinner. I talked about the cookie butter on Friday and how much I love it and this has been my favorite way to eat it so far!
Cut up apple and a few pretzel sticks drizzled with melted cookie butter. By melting it, you can use only 1 TBSP of cookie butter, but you get enough to cover everything! Love this snack!
For dinner Mike and I made something separate from the kids. Most days I try to make stuff that I know the kids will like at least something on their plate, but sometimes on Saturdays we eat something totally different than the kids. Tonight we went with an Indian dish and it was great!
I bought this Curry Simmer Sauce from Trader Joe's. I added some already cooked shredded chicken to the sauce and put it all over Jasmine rice. Delicious! I will definitely buy that sauce again, it was so easy to put together a full meal!
My little guy was sick so I did a little stock up on popsicles and I found these Watermelon pops and I had to have them. I am a big fan of anything watermelon and these were delicious and for 2PP, just a perfect snack!
There you have it, a 29 point Saturday! This week has gone really well and I am off to weigh in this morning! I can't wait to find out what the scale says! It is always a nice feeling to know you did great and are excited to see the scale, it has been a few months since I have felt that way!
