You guys, I ate cake this week and some cupcakes and I didn't have to feel guilty about it! Olivia wanted to bake on Monday and I was out of eggs, then I remembered that I had pinned a recipe for lemon cupcakes with only a few ingredients that were only 1 point for a mini cupcake. Last time I was at the store, I bought the ingredients so I told her she could bake those. She decided to do it in cake form and we melted some icing for the top. Delicious!

Then I got to thinking...if I could do it with lemon cake mix, why not another flavor. I like lemon, but it isn't necessarily my favorite, but when we talk strawberries, I am all over that! So I went and bought a strawberry mix and let me tell you, these are so good!

Ingredients

1 Box of Strawberry cake mix
1 - 100 calorie strawberry greek yogurt
1 cup - Water

Instructions

Preheat oven to 350 degrees and prepare pan. I used cupcake liners, but you could grease the pan
(or use a 9x13 cake pan)

Mix all ingredients

Scoop into liners, filling a little more than halfway

Bake for 15 minutes

I was able to make 48 cupcakes and of course ate a few!

Each mini cupcake is
1 WW Points +

24 regular cupcakes is
2 WW Points + each

9x13 cake pan, divided into 12 pieces
4 WW Points + per piece

Take your pick of how to make them, but you should definitely try them!

*** A few notes, when we made the lemon cake we didn't have the 100 calorie lemon yogurt so we used plain greek and the flavor was still really strong from the cake mix. So I think you can sub plain or even vanilla and they will be just as good! 

**When I bought the 100 calorie Yoplait Greek Strawberry, I didn't realize that it had fruit in the bottom. I didn't notice the fruit in the cupcake, although I did scoop out some of the big pieces because I am super weird about texture. So if you don't want the possibility of finding chunks of fruit in your cupcake make sure you get a smooth yogurt! 

*Don't forget to add in the points of your topping. I chose frozen lite whipped topping and that is super low in points. 1 TBSP is zero points and beyond that you can have up to 5 TBSP for only 1 point. I consider that a really good choice!

What we are eating this week...

I had this cheeseburger salad instead of a burger on a bun last night for dinner and it was delicious! 


I made these 1 point mini cupcakes for dessert and they were perfect! Recipe up tomorrow! 



What I am reminiscing about...

My wedding day! Tomorrow will be our 10 year wedding anniversary! I can not believe that we have been married for 10 years. Honestly, where does the time go? 10 years, 2 houses and 2 kids later and we are still working hard every day on this marriage and our life. It isn't always easy, some days it is downright hard, but I tell you, I still couldn't imagine living this life with anyone but him. Happy Anniversary Mike!

What we've been up to...

We have been doing a whole lot of watching t-ball and I just love it! Watching the young kids playing ball for the first time and just trying to figure it all out, is adorable and hysterical and just so much fun! Owen has really improved in the few weeks that he has been playing now, he runs when he hits the ball...the correct way, he touches the bases when he runs, and he no longer tries to catch the ball when he is running the bases only when he plays the field! Everyone just thinks he is the cutest thing when he is out there playing and I have to agree!

What I am dreading...

Honestly, right now, nothing! We have so many great things going on that I can't wait for and nothing that I am dreading right now! 

What I'm working on...

I have a really sweet book from when Olivia graduated from pre-school and I am working on creating this book for the kids in Owen's graduating class. It is something that I will cherish forever and I am so glad that I will have one for both kiddos. It is also an excuse to get together with a friend I haven't seen in a long time while we work on them! Gotta love that! 



What I'm excited about...

Olivia's dance recital! She has worked so hard this year and I can't wait to see her dances come together on stage! Not only can I not wait to see the performance, but it also marks the end of dance for the summer and that means less running around. The first week in June is the last dance class, dress rehearsal and the performance. Owen also graduates from pre-school. So we are marking things off the list and my schedule is slowly opening up, that is something to be excited about!!

What I'm Watching...

After finishing Friday Night Lights, I haven't picked up a new series yet. I have watched a few shows but nothing has sucked me in. Shows that I love...Parenthood, Blacklist, Scandal, Downton Abbey and Gilmore Girls. Have any other suggestions for what I should watch next?? I would love to hear them! 

What I'm Reading...

Last week I read, The Girl on the Train and oh my goodness, I couldn't put it down! It was such a great book and not at all what I was expecting! I have read some really good books in the last few months and I can't wait to tell you all about them in my next book review!

What I'm Listening to...

A fan! It is actually hot today and the kids needed a fan to sleep....summer is coming! 


What I'm wearing...

Finally some spring clothes! We are finally having some pretty consistent warmer temperatures around here and I am loving my capris and skirts. I have really loved the maxi skirt and jean jacket combo this spring and will transition this in the fall as well! So comfortable and stylish! Today I went with the short maxi, t-shirt and my new wedges! Sorry for the blurry pic, but you get the idea!  



What I'm doing this weekend...

We have a pretty exciting weekend coming up. A very special boy in our life is being baptized and Mike and I are the godparents. We couldn't be more honored and we will be going to Rhode Island this weekend for the celebration. I can not wait. While we are down there we will be attending the Air Show and spending one night with my cousin and her family. It is going to be the best weekend! 


What I'm looking forward to next month....

Summer Vacation! It is almost here! I can not wait to spend my days with the kiddos, lots of beach days and just no more running around. It always gets so busy at the end of the year that I just can't wait to relax during the summer. By mid August, I will be ready to get back to our routine, but right now I can't wait to throw it out the window!

Ok, so this is the first time that I was really, truly disappointed at weigh in. As you can assume, I gained. Every other time that I have gained, I knew I would. I hadn't made good choices and had gone over my points during the week and closer to weigh in and I was able to own it and get past it.

This weigh in was a little different. As I said last week, I haven't been counting points on the weekend, then sticking to my daily points target during the week and this has been working for me. We had family here from Rhode Island over the weekend and I ate and drank more than I have in the other weeks on the days I don't track. Then Monday, I went over my points by a few points before getting right back on track Tuesday. So I had an extra day of going over points. What was funny though, is that I didn't feel like I had gained until Friday. Tuesday, Wednesday, Thursday, I was right on track, but Friday morning I woke up feeling heavier and the same on Saturday morning :( So I was pretty confident that I was going to gain, but I was disappointed, none-the-less.

And of course, I am disappointed. One, because I went back up into the 190's. Son of a.... Second, I have a lot going on this week and we will be away this weekend, so I won't be able to weigh in for two weeks and I would have loved to go off on a good note.

But, it is what it is, and what did I learn?? I learned that yes, I can not track on the weekends, but I still need to be conscious of my choices. I still need to eat and drink in moderation and exercise would be a good thing when I know that things are getting out of control.

Speaking of exercise. I only got 2 days in last week. One PiYo workout and one 45 minute walk. I am going to have to up my game. I was doing so well, but this past week, life got in the way. There is so much going on over the next few weeks and I have a hard time keeping up without trying to fit in a workout, so it goes way down on the list. This weekend I was talking to a friend and she said, all those other things will be there waiting for you, make working out the priority and if I have to go out in the evening still in workout clothes, oh well!! I am working on it this week!

On Monday, I got natural exercise by playing baseball with the kids and gardening. Wednesday I am going to walk again and Tuesday and Thursday I plan to do PiYo. That is the plan and I am sticking to it!

Lightened Up Spaghetti Squash

Last week, I planned to make this recipe for Spaghetti Squash, bacon, spinach and goat cheese. Before making the recipe I calculated the points and found that it was 11 points per serving. This isn't terrible for dinner, but if you add a salad with some dressing you are at 12 and I don't always have 12 points to spare come dinner time. I decided that I would try to cut out some points and see how it tasted.

With only one bite, I knew this was my new favorite recipe! It was filling and so, so good. Mike who doesn't even like goat cheese, loved it! If you aren't worried about points, check out the original recipe, but to cut the points down to 9 Points Plus per serving follow mine!



Lightened up Spaghetti Squash
with Bacon and Goat Cheese

Ingredients

1 Medium Spaghetti Squash
1 TBSP - Olive Oil
Kosher salt and pepper
4 Slices - Bacon
1 TBSP - Red Wine Vinegar
1 TBSP - Maple Syrup
1/2 Large Sweet Onion - chopped
1 Small Container of Mushrooms - chopped
5 ounces - Baby Spinach
2 ounces - Soft Crumbled Goat Cheese

Instructions

Roast Spaghetti Squash rings coated w/olive oil and sprinkled w/s&p at 400 degrees for 30 minutes**

While Spaghetti Squash cools, heat a large skillet over medium heat, then add bacon slices.
Cook, stirring often, until the edges start to brown slightly, about 2 minutes.
Turn the heat down to low and continue to cook until the bacon is crispy about 5 minutes.

Turn the heat back up to medium and add red wine vinegar, stirring and scraping pan to deglaze.

Now add the chopped onion and mushroom to the pan and cook for about a minute.

Turn heat back to low and add maple syrup, stirring to combine.

Now add spinach, once it is all wilted, turn off the heat. Let sit while you finish the squash.

Peel the skin from the squash and add the strands to the skillet.

Finally add the goat cheese and stir all to combine.

Serves 2
9 Points +

By taking away a few slices of bacon from the original recipe and adding mushrooms and onions to the recipe it cut down on the points. Mushrooms let off quite a bit of liquid when cooked so it offset the liquid you were losing from less bacon fat. I never made the original recipe, so I didn't know what I was missing, but it was so delicious, I don't even care!

**the original recipe shows roasting the spaghetti squash, and it was pretty easy, but I think you could cook the squash any way you normally do and it would be just as good. For detailed roasting instructions, click here

Hi Everyone! I unexpectedly took a little blogging break last week. Life is super busy and when it came to choosing between exercise, sleeping, reading or some family time, I kept choosing them over blogging.

I so much enjoy writing this blog, it is a great outlet for me and I have met some amazing people along this journey, but when life gets busy it is so hard for me to keep up. I am amazed by bloggers that consistently keep up with a Monday-Friday post schedule. I just can't seem to do it! I have decided that I am going to cut down to a 2-3 day per week schedule from now until the end of summer. I still want to keep you updated on my progress and new recipes that I find mixed in with a few other things,but you won't be hearing from me as much for the next few months.

Anyway, I know you are all wondering (unless you follow me on Instagram) whether or not I got into the 180's this past week??? Why, yes I did! Check it out!


Three reasons this week was a milestone, one of course, is the fact that I said goodbye to the 190's! I am super excited about that! Second, is that I just dropped below having less than 50 pounds left to lose! Lastly, I wore the jeans out of the house! If you have been following along from the beginning you would have read my How the Jeans Fit Friday posts and I never got to a point where I would wear those jeans out until Friday!!! Not a great pic, but I had to do a quick documentation....



I am still so amazed by my progress on Weight Watchers. I am loving it, the diet (if you can call it that) and my weight loss! I seem to have dropped from larger numbers to about a pound per week, which sometimes I feel disappointed and other times I realize that it is perfect. It is exactly what I need because I am still living life, but rather than gaining or maintaining, like I was before, I am slowly but surely taking the weight off! 

I am really starting to notice a difference in my body, in pictures of myself, I am really starting to see a change in my face and I just couldn't be happier! 

The past few weeks, I have not counted points on the weekends and have eaten whatever I want. Then on Mondays I get right back into the groove and stick to my daily points target of, 27, each day during the week until my weigh in on Saturday. I am getting in a little bit of exercise and some days I use the activity points and some days I don't. This system seems to be working for me, although I think if I wanted a bigger weight loss, I could probably see it if I tracked on the weekends. If we don't have anything going on for a weekend, I will give it a try, but for now I am going to stick with this. 

Let's take a look at some of the things I have been eating over the last few weeks! 

Breakfast

I am still eating my All Bran/Granola Fiber Filled Crunchy Breakfast all the time...



But I have mixed in a few other meals as well! 

Egg, Banana 1/2 TBSP of Peanut Butter
3 WW P+

Egg, Light Oatmeal Toast w/spray butter
Banana, 1/2 TBSP Peanut Butter
4 WW P+
When I have the time to make an egg, this has been a great alternative for me. I love the peanut butter flavor and this breakfast keeps me full as well, for a few less points than the crunchy breakfast. This comes in handy if I know I will be eating more points than normal throughout the day or when I want to stop at Dunkin Donuts for an iced coffee! #justkeepinitreal

Lunch

Lunch is always a bit random, although looking through my lunch pictures, I realize that I really only remember to take a pic when I am eating a wrap or pita. They almost always have ham in them and I almost always have carrots and ranch on the side! Then of course I need some crunch so pretzels or the Special K cracker chips, hit the spot! 





I try to keep my lunch to 9 points or under! 

Dinner

Dinner has a few consistent days and some that vary. We always plan for breakfast for dinner or something quick on Wednesday nights and Friday nights is always pizza. I have been making my Pizza swap on most Fridays and one Friday I mixed up the marinara sauce for Alfredo, and it was the same amount of points. I liked the change and hope to try some pesto sauce next time! 


I realized when I looked at the pictures, that I have been eating a lot more salads than I did before! I am still loving all of the Bolthouse Yogurt Dressings and if you haven't tried them you should! I haven't found one yet, that is more than 1 point plus for 2 full tablespoons!

When I am in a rush, I sometimes just make myself a frozen meal. The ones that I keep in the freezer vary from 7-9 points usually, then I add a side salad for a complete meal. I don't like to eat the frozen meals a lot, but in a pinch they work great to keep me on track!

Last night for the second time, I made this delicious meal and tomorrow, you have to come back for the recipe! I am so happy to share this recipe with you all, because I found a way to lighten it up, so that I don't have to save up tons of points for dinner! You don't want to miss it! 


Snacks

My new favorite snack is this...

Sliced apple, 1/2 TBSP peanut butter, 1/2 TBSP mini chocolate chips
2 WW P+ 

Seriously, you must check out Drizzle Me Skinny, she has the art of drizzling all things I crave on her food to add very few points but tons of flavor! I have been trying this out on apples and bananas lately and it is fantastic! I love me some peanut butter and chocolate and this is how I eat it now!  

The other thing I like about this snack, is that it is totally customizable based on how many points you have left for the day. If you have less than 2 points to spare, use less peanut butter or less chocolate chips. Some days I have skipped the chocolate chips all together. Some days, I have had more points and I up the peanut butter to a whole TBSP...even more delicious! This has been a snack that I look forward to...almost every day! 

I have also been making my Chocolate Fruit Smoothie quite a bit. 



I think the key for me to maintain my daily points during the week is to make sure I am eating foods that I like that aren't a ton of points, and sweets is one of those things. I love this smoothie because it is just sweet enough to fill my craving, but good for you so you don't have to feel guilty for eating it, every day if you choose!

WEEK 9! 

I can't believe that it has been 9 weeks, I can't believe that I have stuck to the plan for nine weeks and I can't believe how close I am to the 180's! check out how I did this week! 


Down 1.1 pounds. I really was hoping for 2.1 pounds so that I could have seen 180 this week, but I know I will see it next week! Just one pound to go and one pound is my goal this week. I am not making my goal high because I am not going to lie, I went a bit overboard this weekend in the food department. I didn't exercise and I didn't drink enough water. I am going to have to kick into gear today and get back on track to see even a pound this week! 

My excuse for eating a little too much and not exercising? Well, typical excuses like we were super busy this weekend, we were out of food in the house so we ate out a bunch and well, it was Mother's Day, do I need any other excuse? 

While my eating was good prior to the weekend, my exercise, not so much. I fell off the wagon and I am kind of bummed out about it. I was right on track last week and did so good, but this week, it wasn't a priority. This is week 5 of The Bohemian Housewife fitness challenge and it was a bust. Let's see how I did.

I only worked out twice all week. Monday and Tuesday were non-stop and the weekend was the same. There are days that it works out for me in the afternoon, but some days there is not time and when I know that is going to happen, I really need to do it in the morning before the day starts. Have I mentioned before that I am not a morning person? This week, I am looking at the calendar ahead of time and planning out when the workout can happen. I am also going to do last weeks PiYo schedule since I didn't really do it. I don't want to move ahead until I have completed the week. So here is the plan! 

Monday - PiYo Sweat
Tuesday - PiYo Lower Body 
Wednesday - PiYo Core 
Thursday - PiYo Upper Body
Friday - Rest

Friday Favorites

It's Friday! I love Friday's. When all the rest of the weekend can get crazy, Friday is almost always our chill out night as a family.

For a few weeks, before we can relax on Friday night we first have to go watch my favorite little boy play t-ball! Opening ceremony and his first game was last weekend and was probably the highlight of my week. I have never watched a t-ball game and it was just hysterical! Cutest thing I have seen in a long time, the way the whole team, every position, runs for the ball every single time! Check out some pictures of my little man figuring it all out!






Tomorrow, my favorite little lady has dance recital pictures. She is in two dance classes so that means two costumes and two different times we have to go to the dance place for pics. She has two great costumes, one beautiful for ballet and one super fun for acro, and I can't wait to see how the pictures come out. We have to do her hair in a bun and put a little makeup on, and I am always in awe of how beautiful and grown up she looks.

Last week on Friday favorites I highlighted my new wedges that I am in love with! Then later in the day on Friday we got a package. I had bought a couple things for Olivia on sale at Land's End and when the package arrived, I remembered that I also order myself a pair of wedges!


I love these too! I wore them around the house for a while and they were also very comfortable and get this, I paid $17.49 for them! They we on sale and I had a 30% off code when I ordered! You can not beat that price for a pair of Lands End shoes! When I looked them up today they are still on sale for $24.99 and they also come in Pink! You can see them here

I think I will wear one of my new favorite shoes on Mother's Day! I can't wait to see what the kids and the hubby have planned for me on Sunday! I love, love being a Mom. It is by far the most favorite job I have ever had. It isn't easy, it doesn't pay well and a lot of days it leaves me very worn out, but I am so thankful to be these kiddos mama. I wouldn't trade this job for anything!

May Goals

Well, I know I promised a new recipe this week, but I forgot that it is the beginning of the month and we need to talk goals. Sorry! I promise there will be a new recipe up next week! I have some good ones lined up! 

Before we go on to May goals let's see how I did in April! 

1. Continue w/Weight Watchers ✔
2. Walk 3x per week ✔
3. Organize digital photos -still didn't do it...someday!
4. Spring clean at least 2 rooms - moving to next month
5. Continue working on self love ✔
6. Go to church at least once ✔
7. Read 2 books ✔

Not too bad! I am checking off the walking even though, I didn't always walk 3 times a week, but I did exercise at least 3 times a week this month, so I figure that counts! Those darn digital photos are going to follow me all year at this rate. The spring cleaning, well...my excuse is, this is the first week I have been able to open my windows for a long period of time! I know, not much of an excuse, but I can't do a big cleaning without fresh air pouring in. I just can't! 

Now let's check out May Goals...


1. Continue with Weight Watchers and reach 20 pounds lost - I am so happy with the diet and the results so I am keeping it as one of my goals. This is the longest I have stuck to a diet in recent years and I am less than 5 pounds away from 20 pounds! I can't wait to be able to say I have lost 20 and that will put me firmly in the 180's which I haven't seen in a long time! 

2. Continue to do 6 PiYo workouts each week - I really like the PiYo workout, so I am going to make one of my goals to stick to the challenge. It shows 6 days/week of workouts but sometimes I may double up if that works for me. Instead of saying 6 days, I will say 6 workouts each week. 

3.  Family walks and bike rides in the evenings - I love the nights we have nothing going on and can make some time as a family. It is only 1-2 nights a week during the school year, but I would like to make a point of doing something active on those evenings. 

4. Organize Digital photos - do I even need to explain? I have explained this one the last 2 months. 

5. Spring Clean 2 rooms - Now that the windows are open I am scheduling it in! I am hoping to do the living room and kitchen this month!

6. Go to church at least once - Olivia and I went last month on Easter, this month I would like to make a point to go either a Saturday night or Sunday as a family. 

7. Read 2 books - Gotta keep up with my Goodreads goal! 

8. Keep everything together and in order and stay sane- the end of the school year and extra activities are coming to an end and we are busier than ever this month and the first part of June. If I can show up at everything I am supposed to and I haven't started drinking daily by June 19th, I will be in good shape!
